The Blustery day cashed in


Well here is something that look promising. It’s a power generating windmill that looks COOL! Finally right? When this comes up on the market I am hoping I will be able to get one of these. Honestly it looks like a high tech pinwheel how nifty is that?!

Zucchini Pancakes!

This zucchini pancake recipe marries the warm-spiced flavors of zucchini bread with the ease of quick and healthy whole-grain pancakes. When topped with maple syrup and pecans, these zucchini bread pancakes make an irresistibly delicious breakfast. If you don’t have pumpkin pie spice, use 1/2 teaspoon cinnamon, 1/4 teaspoon ground ginger and 1/8 teaspoon each ground nutmeg and cloves.

2 cups shredded zucchini
1 1/4 cups white whole-wheat flour or all-purpose flour
2 teaspoons baking powder
1 teaspoon pumpkin pie spice blend
1/4 teaspoon salt
2 large eggs
1 cup plus 2 tablespoons low-fat milk
2 tablespoons melted butter
2 tablespoons light brown sugar
1 teaspoon vanilla extract
1/2 cup toasted pecans, chopped

Put shredded zucchini in a clean kitchen towel and squeeze to remove as much moisture as possible.
Whisk flour, baking powder, pumpkin pie spice and salt in a large bowl. Whisk eggs, milk, butter, brown sugar and vanilla in a medium bowl. Make a well in the center of the dry ingredients, add wet ingredients and whisk until combined. Fold in the zucchini and nuts.
Coat a large nonstick skillet (or griddle) with cooking spray; heat over medium heat. Cook pancakes in batches, using a scant 1/3 cup batter for each and spreading it to make them about 4 inches wide. Cook until bubbles dot the surface, 1 to 3 minutes. Flip and brown on the other side, 1 to 2 minutes more. Reduce the heat if the pancakes are browning too quickly. Serve hot.
Toast nuts before using in a recipe for the best flavor. To toast whole nuts, spread on a baking sheet and bake at 350°F, stirring once, until fragrant, 7 to 9 minutes. To toast chopped, small or sliced nuts, cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.
Per serving: 300 calories; 15 g fat (5 g sat, 7 g mono); 89 mg cholesterol; 34 g carbohydrates; 5 g added sugars; 10 g protein; 4 g fiber; 369 mg sodium; 311 mg potassium.

Tuesday was trembling


I love this project and It makes me think of stuff I wanted to do as a kid & a teen. My hope is that this will make a good start to cleaning up our mess in the oceans. We just need a better way to live in this world.

Hey so I like positive news and science news and this is both in one! This was a wonderful way to start the day. I like the world I live in because they are exciting times. Now when I say exciting I know we are struggling but we have a capacity to talk with people from all over the world. I have been inspired and reminded of simple easy solutions to solve problems in my own life from people across the globe. This is due to videos on YouTube, Ted Talks, DIY blogs, IRC, and much more.

Neil DeGrasse Tyson is the Gold standard


I am more and more impressed with this man and he reminds me of Thomas Jefferson with his diverse background and knowledge. I am hoping that I could be as eloquently spoke when given the chance.

Sympathy is not Empathy


This video touched me and finally described the difference between Sympathy and Empathy that I understood. It explains why when I tell my problems to some folks I feel worse and to others I don’t feel as heavy. Because the connection between me and the person I am telling lifts the “I am so alone” feeling out of my heart just a bit.
Empathy from the people I met at the church now attend is the reason I have started to know peace in my life.
This man from Nazareth the slum of the ancient arab world who was a born of the dirty cousin of King David totally empathise with me. People don’t talk the way he did and mean it usually. There is no way I or anyone deserves a friend like the way he a friend to everyone. This may sound strange but sometimes I think of him the same way I think of Dr Who because of how much they both love humanity even with all of it’s flaws. Both work really hard and in strange confusing ways and achieve the unexpected and needed.

So my friends I don’t know what your pain is but I see that it’s there and I am just glad you share a few moments on this blog and we can connect. Thank you for reading and I am always happy when I have written something that finds a connection with others.

House shopping


Hey everyone,
I love tiny homes as you know and it would be nice if I could have me a little homestead. I have drawn out many designs and most of my drawings for tiny homes include a balcony but I haven’t seen any others until this video. This video also shows more use of a upstairs area than just sleeping and I find that key. I don’t like the idea of wasted space and kept feeling like the tiny homes out there actually had unused spaces.
Anyway I hope you will like this video because it has reassured me that I can build what I have designed. If I get my scanner working I will share my designs with everyone.

My cousin plays the violin and my sister plays the flute and I sing so sometimes I think it would be amazing to make some music together when I hear such wonderful stuff.
